Why does it insist on a date of death?

Because marking someone as passed away changes what they are on your tree: they become an ancestor, not a family member. Living grandparents are family members; ancestors are the ones who have passed.

An ancestor without a date of death is a promise the tree cannot keep — shraddha dates and the timeline need the day. So the date is mandatory, not optional, the moment you say they have died.
