If I go, do the people I added go too?
No. The people stay; only your name leaves them. Removing someone deletes the card you added, never the person — and the same holds when you leave entirely: the relatives remain on the tree, with the record that someone added them kept but anonymised.
Your family does not shrink because you walked away from holding it.
